I am crazy for tarts. Any kind! I try several combinations from time to time and of course I have my favorites. Last year during a trip to Indochina I passed from Singapore where I bought a series of a cooking book named new healthy kitchen. Today I decided to start cooking its recipes and here is the one I chose to start with: red onion and goat’s cheese tartlets.
200 gr flour
½ tsp salt
125 gr butter
2-3tbsp ice water
140 gr goat cheese soft blended with 2 tbsp finely chopped fresh thyme
30 gr finely chopped red onion plus thin slices for garnish
2 tbsp pink peppercorns
Extra virgin oil
Vinegar with myrtles
For pastry
Combine flour and salt in a food processor. Add butter and pulse. Then gradually add water until dough comes together. Gather dough into a ball and refrigerate for 30 minutes. Then place them into tartlets and bake them for about 10 minutes in preheated oven in 190.
Spread a quarter of herbed goat cheese in the middle of each tartlets. Top with a quarter of the onion and a quarter of pink peppermint. Bake until pastry is golden for about 30 minutes. While tartlet’s bake, toss onion slices with oil and vinegar to moisten and sprinkle with salt. Let stand for 15 minutes and then use it to garnish the tartlet’s.
